Pineapple Skillet Upside-Down Cake Review

3 stars (on a 5 star scale) p. 300-303 Not too exciting. Decent. The cake is boring but fine enough. Pineapple is pineapple. The dish makes me feel good about eating it often, because it's healthy (1/2 whole wheat flour and not too sweet). The recipe took a whole pineapple to get the whole three cups of pineapple cubes needed.

This is a great cake but the cakey part of your cake looks MUCH too thick. It really doesn't seem like you used a large enough skillet and that might have been your problem.

Also, using berries or dried fruit tends to make the prep for this cake much easier. I also find added flaxseed meal adds more texture and makes it healthier.

I love this cake. I make it with frozen blackberries, and it is easy and delicious. The pan you are using is too deep and not wide enough. Maybe try it with a skillet?
